Is it Pancake Time Yet?
One of my favourite days of the year is definitely Shrove Tuesday. In Portugal, we celebrate it big. Normally we all fancy dress and go out partying. Torres Vedras is the place to be, and I have some good memories of spending Carnaval there. I’d share a few photos with you but last time I went was about 6/7 years ago, and unfortunately lost all those photos.
But since moving to the UK, and since Carnaval is not celebrated here, I started to like it for a different reason. Pancakes. I love pancakes (I mean, who doesn’t), so the fact that actually, you eat pancakes all day it’s just the best thing ever.

So as you can imagine, I’m counting the days until Tuesday, as my housemates and I are having a “Pancake Party”.
Since Shrove Tuesday is fast approaching, I decided to write this post and share with you my favourite toppings and pancake recipes, for those of you who are a bit unsure.
I feel like this is a very important one. What makes a pancake is not just the pancake itself. It’s the toppings. Now, as I don’t like Nutella (Yes I know, I’m weird), that’s out of the question. But here’s my favourite ones:
Bacon and blueberries – Don’t tell me it’s weird until you try it! I can’t remember when was the first time I tried it but this is sooooo good! And add some maple syrup to it and you had the goddess of pancakes.
Cream egg- BEST. TOPPING. EVER. If you like cream eggs, you need to try this one. You basically cook the pancake and then put it in the microwave with the cream egg for about 1 min, or until the cream egg melts. You are welcome.
Kiwi and Banana – for the healthy ones, here’s a very healthy and super good combo. Up until you add golden syrup, which you can replace with honey.
Banana/strawberry and chocolate: since Nutella is a big no no for me, this is my alternative.

One thing I don’t understand is why some people buy the pancake mix. Guys, it’s so easy to make pancakes and making it from scratch and you don’t get all the crap stuff that it’s added to it.
As I’m a super nice girl, here’s a selection of my favourite pancake recipes. From healthy to vegan you’ve got it all.
Banana oat pancakes – This is my favourite pancake recipe. Super easy and quick to use. If you want to make it vegan just swap the eggs for a bit of lemon juice or don’t put eggs at all. I’ve made it all ways and it’s still pretty good.
American Fluffy Pancakes – These are super easy and quick to make and just amazing!
Red Velvet pancakes with cream cheese glaze – Ok, so these ones I haven’t tried, but they are now definitely on my list. Looking at them just made me drool.

Vegan Pancakes – a super easy recipe for vegans. Just swap the eggs for some vinegar and they are still super fluffy.
Last but not least, whilst looking for some recipes when finishing off this post I found the perfect recipe for Harry Potter fans like me: Butterbeer pancakes! They look absolutely amazing and I so cannot wait to try it out!!
